2 year old with UC

Thank you for the wonderful testimony and support on this forum. I have really enjoyed the encouraging news of vitamin E. As I wrote on an email to you yesterday, my son started the vitamin E enema and your diet.
I think we over done the dosages of vitamin E last night with one 1000 IU capsule. We will take only 1 400 IU capsule tonight. He seems fine this morning. One stool so far (8:30 am). My wife did not find blood like yesterday but did see some mucus.
So far he has only been prescribe with sulfasalazine. He has only been diagnosed with UC for 3 weeks by colonscopy, but had bloody, mucus diapers for 3 months. Since he is in on visible pain, we have taking him off the sulfasalzine to give this diet a work.
The hardest problem was getting him off applejuice. We tried fresh squeezed carrot juiced with stevia last night but he only drank a little of it. This morning my wife mixed homemade yogurt with water and stevia and he seem to like it. He thought it was milk.
Yesterday he had chicken twice, cheddar cheese on cooked broccoli and cauliflower, cooked cabbage and squash mixed with cheddar cheese.
For the enema, we used an infant enema ordered online (3.50 ea). It work ok for the first time. I think I got too much air in it. It was hard getting all of it out.
Sheldon, I do have some questions:
1. I am curious why to use brown rice in the diet. I thought complex carbohydrate were hard on the colon.
2. It is possible to put probiotics with an enema?
3. I read good results done with australian disease centre, curing colitis with human implant of feces (stool) from some other healthy person. Have you heard of this. I hear it quickly introduces healthy probiotics.
