Here is one of the staples at lunch at the Institute:
Special Soup
1 med Celery knob
(or 3-4 stalks of celery)
1 medium parsley root
garlic as desired (2 cloves)
2 small leeks
1 1/2 lb of tomatoes (or more- we use more)
2 medium onions
1lb potatoes
parsley to taste
Use all organic produce when possible, do not peel veges- wash and scrub them well and cut coarsley (big chunks)
Simmer on low for 2 hours
put through a food mill
store in refrigerator for no more than 2 days
