well, you CAN do dairy free probiotic cultures, if you start with a dairy free probiotic. primal defense is dairy free, and it will culture, i know becaue i have done it. however, it contains fermented grass, so it doesn't taste the greatest. but you can pulverize it, put it in a glass with water and molasses, and put it in the yogurt maker, and it will culture.
i myself plan on trying to culture two different products, both of which i have heard great things about. one is "nature's biotics." this product contains soil based organisms, and is very similar to primal defense, however, i don't believe it has fermented grass, tho i could be wrong.

this is another probiotic i have heard a lot about and plan on trying. it looks really good. someone said they had tried over 70 different types of probiotics and this was the best one by far. its non-dairy based. there is no reason why it couldn't be cultured.

i like the probiotics with lots and lots of differnt strains of bacteria, not just one or two. all of the above have at least 15 strains in them.
