Its about how easily or less easily certain items breakdown and are assimulated. The smaller the molecular compounds the faster and easier they are taken into the blood,and the more complex tissues involved in the makeup of food items slow the process so as to gently allow the administering of the sugars to the blood stream. So figs , grapes, melons ect fit into this smaller molecular compound catagory.

The grain's bioavailability is so concentrated that it needs to be broken down thru a more involved process( unless sprouted and then they are considered easily assimable) and that is why grains are considered reletivly unhealthy, tho I feel if one restricts usage and quantity, and eaten raw, similar to unstressful amounts of nuts ( mabey 6 a day) our systems can benefit.

Your system will go wilingly if you dont burden it with too much jargon and simple get down to what is making you healthy/energetic vs the opposite.
