soy was originally promoted for widespread use in the united states as a way to speed up the process of replenishing nitrogen in soils depleted by other crops. rather than let the field lay fallow, soybeans were planted. that began a search for a market for the product. this practice is not much older than 100 years. soybeans, the entire plant, are a waste product and the introduction into the food supply on the scale that it is today is one giant experiment - it has never been done before.
