Hey, FF, the fermenting agent in this recipe is, yes, our friendly microbes which are present in the air. I assume that they float in to feast on the sugar.. :)
HOWEVER, it seems that they'll float in to feast on anything...I've made kimchi & sauerkraut from this book & those recipes call for only vegetables & salt...

I just found this, on sauerkraut...

"Sauerkraut, like MOST fermentation processes, involves a succession of several different microbial species, not unlike the life of a forest, in which a series of trees follow each other as the dominant species, each succeeding type altering conditions to favor the next..."

Is that COOL, or what!? :)
