seriously, buy this book. I'm reading it right now...a lot of it is beyond me...but I will study, study, study! :)

One thing I learned tonight...Did y'all know that hydrogenation is acheived with the use of a metal catalyst(I'm paraphrasing, probly got the lingo wrong, but I'm sure y'all get my gist)? and that this metal catalyst can be made up of nickel and aluminum? And that these metals remain in the finished product? hmmmm....margarine....aluminum....alzheimers??? not much of a stretch there!

but besides all that, LOTS of info on oils, processing methods & what we need to keep us healthy! :) As dedicated swishers, I believe that it is our responsibility to READ THIS BOOK!!!!!

Processed/refined oils are the SAME THING as white bread, White Sugar , etc...BAD, BAD, BAD!!!
