A well-earned congrats on your test results. Take this as prrof that the changes you made are working for you. A couple of things you are doing can be directly attributed to your improvements.
For many people grains are bad news. Loren Cordain, Ph.D has written extensively about this.
Also, Sally Fallon and Mary Enig have written extensively about the imporatance of animal fats. Not only are they nuetral in terms of heart desease risk, they are crucial for the functioning of the heart, the liver and hormone production. Most interesting, animal fats help the serotonin receptors work properly which could explain why people who suffer from anxiety do well on diets of 40% fat and symptoms worsen when fat falls to 25%.
Even the media is finally spreading the message that low fat diets are generally a disaster (regardless if you eat meat or not). Vegetarians should still eat plently of fat (from butter, flax and olive oil). With the exception of McDougall, vegetarianism is wearing a new face these days (moderate use of essential fats).
Your cholesterol numbers are good. Don't sweat it. As you continue eating under your new plan, the numbers will probably go down. There is often an intial rise when adopting a low carb diet as your body makes the physiological adjustments to low carbing.
