You could try making a mushroom soup with stock, mushrooms, celery, seasonings, gelatin or arrowroot, etc. and reducing it down over a period of time on a low or med low heat. then let it cool slightly and add cream cheese, creme fraiche or raw cream (depending on desired consistency) and then blend for smoothness. Just an idea. It's coming up on Thanksgiving and I want to make that traditional green bean dish with the cream of mushroom soup and the fried onions on top. I've just got to wrap my brain around the fried onions now....
