I am from Poland. We use sauerkraut regurally. You can buy it from almost every store, often stright from a wooden barrel. Today some of my friends still make their own, at home. It keeps well few month. Nobody puts water into it. Sauerkraut juice should be a juice not a drink of sauerkraut and water. Adding water promotes spoilage in short time. I wonder how it taste.
