Good idea, I never heard of xylitol. I'll check into it more. I found one recipe online that says to use fructose. But Fructose is Sugar also. It is just fruit sugar. So I'm not sure that one will work. Somebody else said to use nutra sweet or stevia. But I don't that will work either. Because peanut brittle requires lots of Sugar to make the syrup. The brittle part of the peanut brittle is the melted Sugar meleted into a liquid and then peanuts stirred into it and then cooled to a hard brittle. And nutra sweet is just a tiny bit(less than a teaspoon). So nutra sweet won't work. Not sure how the bakeries do it, and they aren't giving up their ingredients. They said they use nutra sweet. I don't think they are.
