Do you mean that you have gotten rid of the candida or that you never really had it? I think (someone correct me if I am wrong), when you reduce the population is when you see improvements. It doesn't mean that just because you are eating Sugar (in the carrots) that you would have symptoms if you had candida. As I have progressed, I am able to tolerate much more than before and I believe it is due to having reduced the amount of candida in my body.
