good question!
the benefits of juicing would be lots of vitamins, enzymes, and antioxidante. juicing is done with low heat, so most of the vitamins and enzymes survive, and these are essential nutrients. many nutrients are degraded or killed with heat, but juicing mostly retains these nutrients.
broths, on the other hand, would have no enzymes and few vitamins, as these typically don't survive the heating process. however! i believe that a good portion of the minerals are hiding out in the fiber that gets ejected from the juicer, the slow heating process of broth making leaches these minerals out, and then dissolves them in water. plant based minerals dissolved in water are absolutely the MOST assimable form of minerals possible in my opinion, especially if you naturally chelate them with lemon juice.
also, herbal teas are a form of broth. many of the healing properties of the herb survive the heating process. i have oftened wondered about what exactly is being imparted into the water with herbal teas??? vitamins? minerals? enzymes? specifically what kind of nutrient does the healing work in an herbal tea? does the herb impart a homeopathic signature to the water, similar to the theory ofmorphic resonance? i really don't know.
