Wow! what great resources! Thank you SO much!

A few years back we grew milk thistle. I was attracted to it visually, didn't know the medicinal properties at that point...well, I became aware of the medicinal properties AND the culinary use, however, I was unable to find any resources on the use of thistles(stems), when to harvest, how to prepare & all that....
That year we had a lot of happy finches flitting about! Next year....??

I have been eyeing the amaranth in Johnny's catalogue. What a beautiful plant!

Dandelions? No problem! We use the greens in salads. Dandelions are incredibly good for the soil as well. The deep taproot they send down breaks up the soil...

So, next year, nettles, milk thistle, amaranth....??

& Yeah, collards...mmmm...we crave them sometimes...
