I've been "limiting" myself to 4 or 5 carrots a day....no good reason for it, I'm just trying to make sure I don't skimp on other goodies like spinach, kale and cabbage.
Re the recipes, I think carrot is popular because it's so palatable, also carrots store well. The juice is quite soothing. If I'm in a rough patch during a fast I'll sometimes make an extra juice with just carrot and apple...it puts everything right with the world!

My current vegetable quota goes something like...
1/2 bunch parsley (which equals about 1 cup of the leaves, or 2 TBSP juiced)
1/2 Beetroot
4 good size carrots
1/2 cabbage
1/3 sweet potato
Good size bunch of spinach, or sometimes kale
1 cucumber
4 good size stalks of celery

Fruit:
1 pear
5 apples (usually green)
3 lemons (squeezed in hot water)

My juicer is fairly efficient so that makes my 6 glasses of juice easily.
