I've been wondering this too. I would bet they use something to make the greens stay "fresh" so long in a sealed bag. I just wonder how bad it is. It's awful to have to be suspicious of organic food like this but yesterday I ate a bag of Earthbound Farm salad and felt very tired afterward. I wonder if it's MSG?
