i think that if it is yellowish, they may have put just a touch of turmeric in it. you alse see this if you buy shea butter at the african market. i think they just do that to make it look a little more interesting. there is not enough to affect you and turmeric is good for you, anyway.
i think the issue with the indian ones may be that it is not organic, although i cannot comment on how coconut trees are cultured and if they are sprayed. it is also probably more refined than the kind we tend to prefer for health reasons. i am sure you could cook with it but i don't know if it retains the benefit of less refined product.
