Mystery solved! When the Nutiva arrived, it was a warmer than usual day [about 50-55] and it must of been much warmer instead the UPS truck. It was delivered to where I work and I couldn't wait to get home to open it up and try it. It was quite soft and came right out.

When I got it home and tried it again the next day, it was hard! I put it in a bowl of warm to hot water and the bottom softened up right away. It took very little time.

I like your idea of putting it in front of a heater - I am going to try that next. Thanks!
