Re: alkaline/acid--ph balance?
I have also recently been researching acidity/akaline. From what I read, eating an improper balance over time will make a difference: if you aren't getting the proper nutrients that balance acidity, your body will rob your bones and organs of the calcium, etc it needs to maintain the right ph level. Being too acidic also makes you more susceptible to disease. I bought some ph strips, and though my children are almost always the right ph, I am almost always acidic. So I've been more aware of my diet. It's not that you can't eat meats, but your total diet should be more alkaline than acidic.
We grind our wheat and try to eat healthy, so when I have been reading what Sally says about soaking my flours, I think that will greatly help my ph level. The soaking reduces that phytic(?) acid which doesn't allow you to absorb certain nutrients; the same nutrients you need to balance acidity. The fermented foods should help that as well. Like someone else said, Sally is a big proponent of eating fruits, veggies, and 'real' food. That kind of food is mostly alkaline. Most processed foods, white flour, and
Sugar foods are acidic. So I think following her diet is a good thing.
