I don't know. Did you make the NT recipe? I made sauerkraut and kimchee and both were salty but not TOO salty. Maybe if you made the recipe using whey it would be less salty. My aunt thought my fermented veggies were too salty but then again she doesn't really like salty foods. You could probably make the recipes with less salt than what you used, if they taste that strong.
