The soy protein is a big no-no in nourishing traditions. I know Hain makes a safflower mayo that I have used. Unfortunately, Whole Foods no longer carries the whole fat version - only the lite version. Now I make my own mayo and it tastes great! I have used safflower oil and sunflower oil. I tried olive oil and it tasted foul. I would love to make it out of coconut oil but the one time I made it, I forgot that I would have to chip it out of the jar once it was kept in the fridge :-).
