By a stroke of excellent luck, I have found a source of kefir starter in Taiwan, of all places. I have also located a source of young coconut juice in cans. Yes, I know canned juice isn't good, but I have to work with what I have here...which isn't much.
The can says that the coconut juice is just that...young coconut juice without Sugar or preservatives . I've got my kefir starter SO...how to make young coconut kefir. Especially when I don't really have a kitchen (I'm living in a room furnished by the school I teach for) and all I have is a mini-fridge and a hot plate.
