Cilantro Salsa... Great base for many recipe variations


Pique (Cilantro Salsa)

Juice of 3/5 good sized limes or lemons (1+ cup)
1 teaspoon Sea Salt
¼ teaspoon pepper
1-2 bunches chopped Scallions
1 lrg bunch cilantro washed, chopped fine
1 cup finely chopped tomato
½ chopped very fine red or white onion
1 teaspoon chopped jalapeno pepper or sauce
1 teaspoon of finely chopped garlic

in small container pour lemon/lime juice
add salt & pepper
stir
add chopped onions & scallions first
add other ingredients
mix
let it sit for at least 5 minutes prior to serving
(add more lemon juice and Sea Salt if needed.)

Add to soups, salads, steamed fish or shellfish.

Or cut up celery, red onion, olives, tomato, carrots, lettuce add some olive oil and the pique, and let marinate for 20 minutes then serve... YUMM (You can add steamed shrimp for a delicious seafood salad)

other yummy suggestions:

or: put in blender add more tomatoes = great gazpacho soup.

or: put in blender, add cut up cucumber = cold cucumber soup

or: add to salads as a salad dressing with some olive oil, balsamic vinegar and regular vinegar.

or: add to any soup or broth (vegetable, fish or chicken) for a delicious hot soup.

or: You can mix with the mango as mentioned below (I like it green and crunchy in strips or small cubes.

And or:

Add Jicama - shredded or cut in small strips.

or:

Add avocado in small chunks.
