Vegetable Pita Bake
My new favorite lunch / dinner. This is great for groups of people at a lax meal, everybody can customize their own Vegetable Pita Bake.
Pita Bread
Avocado / Guacamole (Spaghetti sauce otherwise)
Sliced meat
Shredded cheese
Various Ingredients, optional, pick and choose to your tastes:
- Bell pepper
- Tomato
- Mushroom
- Onion
- Cucumber
- Broccoli
- Pineapple
- Shrimp
- Avocado
- Anything else your mind can come up with?
Take an Avocado out of the skin, mash it up into a bowl with a tablespoon of mayo / miraclewhip, a dash of lemon juice to make guacamole (tastes a lot better than storebought)
Spread it on a flat piece of pita bread nice and thick. (if you don't like guacamole or it isn't available, use spaghetti sauce)
Take a strip of ham / pepperoni / etc sliced meat and lay it on top of the guacamole.
Here's where you customize it to make it flavor, put lots of random vegetables on top, I like to use bell pepper, tomato, mushroom, onion, cucumber and broccoli, but the possibilities are pretty much left to your imagination, it all tastes good. Then you can add things like pineapple, shrimp, avocado slices, various types of meat or whatever you feel like adding.
Smother shredded cheese all over the top.
Have the oven pre-heated to broil at ~350F degrees, put your pita bake on a cookie sheet, stick it in the oven, and be sure to leave the oven door open about 2
inches. You want to heat the entire pita very evenly, but without burning the cheese. Leave it until the cheese gets slightly brown. This is usually about 5-7 minutes. Then you can either use a knife and fork (if you piled the veggies on to high), or attempt to eat it like a slice of pizza like I do.
Two of these usually fill me up, and it's a very healthy / cheap meal.
