Spelt Pancakes
Spelt Pancakes
This recipe will make enough pancakes for two to three people.
2 organic eggs
1/4 cup of raw honey
1 teaspoon of baking soda
two tablespoons of coconut oil
1/2 teaspoon of celtic
Sea Salt
3/4 cup of plain yogurt
2 cups of organic spelt flour
3/4 cup of water.
1 cup of organic blueberries or
1 cup of chopped organic pecans (optional)
Maple syrup
Butter
Beat eggs, honey, oil, and baking soda together. Add the salt and yogurt to the mixture. Slowly add the flour with the water. Add the blueberries or pecans if desired.
I coat the griddle with a light coating of coconut oil so the pancakes don't stick. Use low to medium heat. Add butter and maple syrup to your liking.
I also use a Vita Mix to grind my spelt berries so that I know my flour is fresh and not rancid.
You can leave out the yogurt, just add a bit more water to the mixture.
The taste difference is not really noticeable if you leave it out. They are a bit fluffier if you do use the yogurt.
