Send him notes during the week, like they're from a secret admirer. Set the date up in the notes, and let the aura of the date be as if you are two people who are madly in love, but are meeting for the first time. Of course, he will know it's you sending the notes, but it will help set the mood for the date, not to mention set a lot of expectations for the date during the week. Each note will build more and more to the date.
As for the details of the date, that would be up to you, but it could pretty much create itself. You could set a theme in the notes based on something that really turns him on. Both of you could take on different identities for the date. Get creative. Hope you have a wonderful date!
