As a ''high or purine protein type'',with descendents of dairy farmers and sausage makers, I don't have to make a ''leap of faith'' to accept these theories. As someone who has suffered with hypoglycemia,type 2 diabetis etc. I experience first hand the negative affects of carbohydrates, especially sugars, grains(whole and refined),and high sugared fruits. I also find the Science involved with blood glucose and insulin levels to be precise and profound, and also readily available if you don't let 30yrs. of low fat propaganda get in your way. Also Science does show that whole grains do contain life degenerative toxins,both in the lab and historically.
