You know who has some good soup recipes (and other stuff)? Dr. Joel Fuhrman, m.d. He has a book called "Eat To Live" that has a couple of weeks of menus and recipes. Bob's brother Mike works/studies with him (or he has in the past).
Bean soup is really easy to make. Soak a pound or two of dried beans overnight, rinse in the AM, fill the pot with water, and let it simmer all day. Add real salt, pepper, garlic, onions, hot peppers or salsa, etc and you've got a winner. I make brown rice with it, scoop some up in the bottom of a bowl and pour the hot bean soup over it- mmmmmmm. Make a salad and tada! Dinner's served!
