Hi Mary,

Gluten isn't an additive, its a part of the wheat and other grassy plants. Rice doesn't have any gluten in it. Sometimes gluten intolerant people can tolerate sprouted grain bread - called ezekial bread. And of course its not just bread that has gluten - anything made from wheat, like pasta, has gluten in it.

here's the definition -

Definition: gluten. A protein group found in wheat and other flours that forms the structure of the bread dough. Gluten holds the carbon dioxide (CO2) produced by the yeast and expands during fermentation, and provides the elasticity and extensibility (stretch) in bread dough. Glutenin and gliadin are the two proteins that form gluten.

modified food starch
