I am a high purine MT and on day 8 of the elimination diet. I am so bored eating red meat and liver I bought some heart, elk chops, wild boar and passed on the venison sausage (which they tell me is very, very good! )
I marinated and cooked the heart per Sally Fallon's recipe in Nourishing Traditions...and it is AWESOME! Totally rocks. Heart is really benign..no strong flavor and a nice texture. Next time I'm going to stuff it and bake it...lots of our grandmothers cooked heart that way. Ofcourse I have to stuff it with nuts etc. and no bread.
I'll post about the wild boar and elk as I try them.
