Re: Broccoli Recipe
Well it's not really casserole, per se. I make a quick single-serving concoction but it is rather like a casserole, I suppose.
I boil 1 cup water, pinch of
Sea Salt , add 1/2 cup oats. Cook. Not too soft, slightly al dente. Simultaneously steam 1 head of broccoli. (Might want to start that first as it sometimes takes longer than the oats). Pour oats into the bowl you'll eat out of. Stir in 1 Tbl. or more
Extra-Virgin Coconut Oil. (Optional: stir in 1 free range egg, I do this about 1/2 the time) Top with Broccoli. Some fresh cilantro, optional, very yummy. Eat.
These days I am eating it with homemade kimchi! VERY delicious! I eat it either with the kimchi AND broccoli, OR just the kimchi (if I didn't have any broccoli at the time).
Most people think that sounds gross, but I think it is because they think oatmeal as a sweet breakfast cereal. If they thought of it as a whole grain, sorta like brown rice, only cooks quicker, they might realize it is a very good dish. Quick and easy, too.
Coincidentally, I am cooking my oatmeal even as I type this up...
