this is so good I could just eat it along everyday of the week...It is a lebanese recipie I got from my mother i law....
1/2 cup chick peas...soaked overnight...1/2 cup red or black beans soaked over night...1/2 cup brown or green lentils prepared and washed..prepared them only means spread out and checked for rocks or pebbles...and washed well..9 cups water. 1 teaspoon salt...or not...1/2 cup bur'ghul washed and drained that is crushed wheat that has been boiled, dried in the sun and then ground..you can find it in the health food store...washed it and drain it...1/4 cup rice washed and drained.1 large onion,,chopped 1/2 cup olive oil or nut oil...
drain the soaked chick peas and beans and place in a large saucepan with the lentils, water and salt..bring to a boil cover and simmer vigorously for 30 minutes..Add the Bur'ghul and rice...then in different pan fry the onion in the oil until they are redish brown then pour the onion and oil into the bean mixture..cover and continue to simmer stirring occassionally until the rice and bur'ghul are cooked..about 35 to 40 minutes..turn down the heat and continue cooking for another 10 minutes adding more water if needed....it seems like alot of work but beleive me it is so worth it...yummmy......Anita
