Dr. Mirkin's article reflects the current sentiment of Medical Doctors. The body can convert most any food into the proper pH.
Dr. Mirkin does not address the fact that many cancer patients have reduced saliva and urine pH. Dr. Mirkin does not cite any studies refuting the connection between lowered Saliva pH and lowered immune system performance. Dr. Mirkin does not cite any studies showing that a lowered immune system is often concurrent with the onset of Cancer.
I feel the Medical community is doing the public a disservice by not testing more routinely for pH and advising nutirional and gland evaluation follow ups for saliva pH below 7.
Robert O. Young, Ph D has published a number of books detailing the connection between the Immune system and the Cellular Alkalinity. the Sick and Tired Book may be the most direct explanation.

The medical community has a difficult time addressing the functioning of the immune system, because there are a number of factors that can affect the performance of the Immune System. The functioning of the immune system is important for preventing disease, which Dr. Mirkin does not dispute.
Diet is one factor in raising cellular pH. Other factors may be causing the pH balance to be low. The typical Amercian diet is more acidic, with more wheat, Meat, egg Yolks and hard Cheese, than the ideal 80% Alkaline diet. Eating an acidic diet places more strain on the immune system, as organs are busy converting Acidic food to Alkaline, rather than preventing disease.
