1. Too hard to get proper amounts, although you could test the pH of the final product and aim for the pH of the initial water.

2. Arm and Hammer baking soda contains aluminium. Aluminium baking soda is usually available in health food stores.


Thinking further about it, are you sure it solely produces sodium ascorbate?

Ascorbic acid + NaHCO3 = NaAscorbate + H2CO3

And the H2CO3 <-> CO2 + H2O if I recall correctly. Does it produce carbonated water?

What happen when sodium ascorbate is mixed with an acid such as the stomach HCl or the intestinal lactic acid?
