Olives are technically a fruit, and so long as it's a good quality extra-virgin oil kept out of the sun or in an opaque container, that's one of the best all-around oils around.
I use safflower oil occasionally, the rest of my veggie oils come from veggies themselves. We're not supposed to overdose on veggie oils actually, they should only be about 1-3% of our total oil intake (not counting olive oil). Read "Fats that kill, fats that heal" for more info.
