Balanced Pasta Recipe
I adore pasta but most pasta recipes are counter-productive to the healing stage. Here's a version that actually aids digestion and should pass the standards of an anti-candida diet even! :)
Take at least 5 cloves of garlic and SMASH them with the flat edge of a chef's knife. Peel them but let them sit for 5-10 minutes. This allows the enzymes to go to work and make them even more healing and anti-bacterial.
A spaghetti or fettucini type pasta cooked al dente and drained. Preferably brown rice pasta rather than wheat - check your health food store. :)
In a small saucepan or saute pan, pour about 3 tablespoons of olive oil and heat to med-low. Add
Sea Salt .
Add 1/2 to 1 teaspoon of red pepper flakes (the heat) to the pan and let them infuse the oil for a few minutes.
1-3 teaspoons of dried basil OR use bunch of fresh. (the sweet and aromatic) If dried, add to oil. If fresh, just chop.
handful of chopped fresh mint (the cool, essential for Pitta, otherwise optional)
handful of chopped fresh Italian parsley (cool, minerals, optional)
NOW chop the garlic up. You can put it into the oil to infuse it, or leave them raw so they keep more of their enzymes. Either way garlic is good for you so go with what makes your taste buds happy. :)
Combine all ingredients and add a couple more tablespoons of a good EFA oil that can stand up to a bit of heat, or just more olive oil (don't be afraid to use a lot of oil, the oil is the sauce) and SERVE to happy pasta campers. :)
Variations: thyme instead of basil.
Marjoram or Oregano instead of basil and red pepper flakes.
Add parmesan or romano for a bit of a cheat.
Sautee a shallot instead of garlic or in addition to garlic.
