oh, good question! i hadn't even thought about using ph testing as a way of testing rejuvelac. have you done this? what is supposed to be a good reading? i just go by taste. also, when you make it do you throw out the first soaking water? some sites say you should and others say you shouldn't. i alway do, it seems to make a purer product when i soak overnight, throw out that water, then start the fermenting process over with fresh water. some sites say to keep that soak water and add it to the rejuvelac later, but that doesn't seem right to me.
