Many raw foodists claim that your digestive system adapts to eating raw, so you get the benefits you used to get by cooking.
Usually, beta-carotene from carrots and lycopene from tomatoes are more available when cooked. According to some, starch (such as in potatoes, sweetpotatoes) are a lot more digestible when cooked.
Broccoli, kale and some other veggies have goitrogenic substances, which are inhibited when cooked (in high quantity, these cause hypothyroidism). Maybe some could argue that
Iodine intake is greater on a raw food diet and that it brings balance.
One thing is sure, you should avoid all grains when going raw. Raw dairy is another whole controversial subject.
