Pasta Sauce Recipes!
Your wish is my command :)
Here are three, please experiment and taste often while you prepare, so you can make it just the way you like it. I never actually measure anything while I make it, so these measurements are just my approximations, so that you can get an idea of what goes into these. Enjoy!
M A R I N A R A
half of a ripe tomato
6 sundried tomato pieces, which you've soaked for an hour in warm water
one clove garlic
cayenne
salt
fresh basil
fresh oregano
2 dates, soaked in the same water as the tomato
Just puree it all together. Add some of the soak water to get it going. I like to put it in the sun afterwards to warm it a little.
A L F R E D O
half a cup or more raw macademia nuts
the juice from half a lemon
a garlic clove
salt
cayenne
Just puree it all with some warm water. Completely orgasmic, really! I've used cashews too, but macs are best. You can also eat this as a soup, although it's very rich. Make it thicker for soup, thinner to pour as sauce over the pasta. It's also so so so so good as a dip for fresh tomatoes.
P E S T O
a handful of fresh basil
some olive oil
a small handful of raw pine nuts - optional
salt
cayenne
a bit of fresh oregano
Puree!
