Re: Grits okay for this southern belle?

Yes, grits are ground hominy, which is whole corn that has been processed with lye. (Not as scary or unhealthy as it sounds, evidently.) Corn is OK with candida. Some will comment that "It's hard to digest," "It's starchy, which is bad for yeast," or "There's fungi in corn," etc. All these may be valid points to some degree. But when eliminating wheat from the diet, one isn't left with a boatload of grain options. In my opinion, to be successful in sticking with a no-gluten diet, one has to take advantage of what else available, and corn and rice are certainly available. If one is worried about starch/carbs, they can simply consume such foods in moderation. I recently cured myself of candida while consuming plenty of corn and non-wheat whole grains, and I suspect plenty of other folks have as well, although this won't work for everyone. My Immuno Lab's candida-safe food guide lists corn as OK (unless allergic to corn -- the same can be said for every other food as well).
