I make this version of vegetable soup which I love and actually my whole family loves and it's so easy to make....

1 Leek or a yellow onion is fine or both is great
2 cloves garlic, minced
2 tblsp. olive oil

- Sautee the onions and garlic in the olive oil directly in the soup pot for about 4 minutes

Fill the pot up with approx 3 quarts of water

Add:

1 28 oz. can of chopped tomatoes
3 carrots peeled and sliced
2 parsnips peeled and sliced
approx. 5 vegetable boullion....(depending on the amount of water)

- Bring soup to a boil and then lower to simmer for approx 15 minutes to cook the carrots and parsnips. Taste the broth to check if it has enough boullion but adding too much will make it too salty so be careful.

Then Add:

4 small zucchini, sliced about 1/4 in thick
1/2 cup corn kernels
approx. 20 string beans chopped
1 can of Cannelli beans or kidney beans, whichever you prefer ( i drain them and i use the can because i have no luck with dried beans :D)

- Simmer for about a 1/2 hour and it's done.

Each vegi will add a great flavor, so dont judge the flavor until after all the vegis are in the broth. If you like butternut squash, which is great tasting, you can add that too. Sometimes i add a tiny head of chopped savoy cabbage.
