Candida diet

Dear Agnes,
I started my candida diet and taking grapefruit seed extract and reading more and more about the topic and learn :-) But now I'm a bit sad because I'm realizing that there is hardly anything I can eat now being a vegetarian. Very little carbohydrates, and so on...
How come I not eat carbohydrates and can eat fruit?
Is it okay if I eat carbohydrates but ONLY wholemeal and no wheet? (for example I love oats, brown rice, millet and rye, is it okay to eat these?)
I love salad and vegetables but I don't think I could live on just salad and seafish for months...
I read somewhere that tofu should be avoided as well which also makes me sad because it is something I was eating and very essential for me.
What is the case with tofu?
And soy milk?
What do you recommend, what can I eat?
Thanks for your answer,
Skylah
