Why Grade B?


I'm sure it has been covered, but I've spoken with a maple syrup producer and he seems perplexed that this diet requires grade B syrup. He thought Dark A would be fine or even preferrable. He also doubted that grade B had that many more nutrients. It is the last run of the syrup but shouldn't have any drastic differences to A. Any comments?
