Olive oil is generally believed to be a good oil without as it doesn't contain any saturated fats and does not clog the arteries. It is usually compared with the consumption of saturated fats. All oils do cause the arteries to constrict to some degree which is a normal reaction. Because olive oil is mainly oleic fatty acid it is absorbed very quickly in the intestines and tends to constrict the arteries compared to other oils but not necessarily more than the normal range.
