When the gut ecology changes so does the immune system in the gut where most of the immune system lies.

Histamine is being released due to the food sensitivity . In general terms, there is probably some type of pathogen residing in the gut that is triggering all of this. Leaky gut is likely caused by a pathogen since the perforations are caused by immune system triggering.

One of the easier things to do is use some pre biotics which could remedy the problem. Nutritional support can always help.
