Different kefir thickness question....


My regular goat milk supplier had all his goats go dry at the same time.

I found another supplier of raw goat milk through Craigslist.

Now I am back to my regular supplier.

Let's call the regular supplier X and the replacement Y

I normally make kefir one quart at a time and let it make for 48 hours (just a personal favorite kefir).

Milk kefir from X comes out thin pretty much like water.

Kefir made with milk from Y is thick. Close to molasses thickness.

I love both but am curious as to why the difference. Could it be breed of goat? Perhaps the goat's diet.

Any comments? No problem, just curious.
