Could be any number of things

What kind of water are you drinking? If tap, or bottled water [Most of that is also tap water]. Distilled is best for fasting.

Sounds like you should listen to your body and end the fast in favor of good nourishing food to see if the problems go away.

The acidic taste in the mouth might indicate teeth. Have any amalgam fillings?, root canals?

Last time you were tested for enough Iodine, or ever test your self with a spot test?

Do you take supplements?

I suggest going back to eating until you answer the questions, and any others you can think of. A 3 day fast shouldn't do this to you, but who knows, we're all different.
