I've done 14 days while working full time. My experience was mixed, but overall fairly easy.
Around day four, I started feeling nauseous (which had never happened before during a fast), and a coworker told my boss she needed to send me home because I was sick, but I told them I was fine and was starting to feel better (which was true).
At the beginning of my second week, I was feeling great. Pretty normal energy levels. During a fast, I can walk about an hour a day and feel fine, but going up stairs requires all my might. Around day eight, I was asked to help carry some things up a flight of stairs and out to a coworkers car, and those were probably the most difficult moments of the entire fast. I nearly passed out on the stairs and again on the way to the car as I tried to keep up with coworkers without letting on that I was struggling.
Day ten a coworker mentioned that I was losing weight and not looking well. Day 13 another coworker said essentially the same thing.
Days 13 & 14 my productivity at work was significantly decreased. I don't believe I was having trouble thinking clearly, but my energy was just gone and it took me a long time to do anything. I was still there and able to function and able to do my job (primarily a desk job), but I wasn't as efficient.
My job also required me to be warm, friendly, and welcoming to employees, and I definitely struggled to maintain that as the fast went on.
Overall, it wasn't a problem. I plan to fast again soon and I won't be taking time off of work. My advice would simply be to prepare yourself for how to respond to comments that may come across as negative, and to plan ahead around any big projects that you know will be coming at work.
And like the above comment says, if you find it's too difficult or if something comes up, you can always break the fast and start again at a better time.
