Welcome Max! What many of us seem to do is cook large quantities of veggies so that we can have them over several days. Baked sweet potatoes are great, and steamed peas, green beans, cauliflower, broccoli, brussel sprouts, greens of all kinds, etc. If you have access to a place to pick up a rotisserie chicken, adding that makes for a good, easy meal. I've also eaten sardines with my veggies. So you really don't have to have recipes unless you just want them for variety.
Having said that, I do use recipes fairly often. I made chicken divan recently and did it the traditional way with a homemade sauce rather than substituting mayo and a cream soup. Just Google traditional chicken divan, and you will find the recipe. So we had chicken and broccoli in that one dish which was nice. I make cornbread sometimes and usually use yellow corn but recently used a combo of yellow and blue corn meals. It made for a "gray" in color bread, but it was very good. And I figured since the blue corn is so good for us, it made it healthier. Next time I'll probably just use all blue corn.
Are you looking for specific recipes ideas? Find some good ones that you like using lamb. The two I alternate are not 100% NB approved since one has apples in it, and the other has prunes. But both my husband and I really enjoy them, and I feel it's better to find a way to eat lamb rather than not eat it. We're not fans of the lamb taste in and of itself so it helps to add other things.
Let me know of other ideas you are looking for, and I will try to help. Oh, one more...I'm going to start doing stir-fry so that I can combine the veggies with a meat in the dish. There are tons of good stir-fry recipes around.
