Eep! So exciting, thank you for pointing out those facts about fructose, this is insanity!
The way I see it, when we genetically alter a species it no longer has to operate by the laws it does when breeding naturally, that is, we program it and it responds. The way we are altering its genetic makeup is completely new, so I believe that we can expect anything to be possible when pioneering such a new science.
Sure, regular beets might stop producing Sugar when they are picked, but I believe it is entirely possible that these Genetically-Modified-Organisms beets don't operate according to the laws it did previously by default anymore. I guess either way without independent studies this isn't going to be anything more than a hypothesis.
